Festive Zucchini Pasta with Green Sauce

This delicious zucchini noodle dish is perfect for those who are managing their pre-diabetes or diabetes but still want to enjoy a wholesome low carb meal. You can add any protein you like to make it a balanced meal.
1 large (or 2 medium) zucchini, spiralize or peeled using vegetable peeler
3 tablespoons prepared pesto
3 tablespoons tahini paste
1 cup unsalted vegetable stock
juice and peel of 1/2 lemon
1/4 teaspoon ground coriander
Salt and pepper, to taste
1/2 cup shredded parmesan cheese
1/4 cup fresh pomegranate arils
Use a vegetable peeler or spiralizer to create long strands of zucchini (yields 3-4 cups)
Make the sauce: Place pesto and tahini in a deep skillet over medium low heat. Warm, stirring. Add stock, continuing to stir until smooth. Add zucchini noodles, cook 3-4 minutes. Transfer sauce to a large pan or dutch oven and cook 5 minutes over medium heat to thicken. Add zucchini to pan and cook briefly, coating in sauce, about 3-4 minutes. Garnish with parmesan cheese and pomegranate arils and service immediately
