The Kale and Avocado Mediterranean Salad is a refreshing, nutrient-dense dish with heart-healthy ingredients. It features fresh kale, creamy avocado, cherry tomatoes, chickpeas, and a drizzle of olive oil and lemon juice, creating perfect flavors and textures.
2 cups kale (chopped)
½ avocado (sliced or mashed)
¼ cup cherry tomatoes (halved)
¼ cup chickpeas (cooked)
1 tbsp olive oil
Juice of ½ lemon
¼ tsp black pepper
¼ tsp sea salt (optional)
1 tbsp feta cheese (optional)
Instructions
Massage the kale: In a bowl, drizzle the kale with olive oil and lemon juice. Massage for 1-2 minutes to soften.
Add toppings – Toss in avocado, cherry tomatoes, chickpeas, and feta.
Season – Sprinkle with black pepper & sea salt.
