This Savory Cornmeal is a smooth, comforting dish made with sautéed scallions, bell peppers, garlic, and creamy coconut milk. Seasoned with salt and pepper and simmered to perfection, it's a flavorful side or base for a plant-based meal. Add beans for extra protein and make it your own.
Ingredients
1 Tsp Salt
1/4 Cup Scallions
2 Servings Olive oil
1/2 Clove
1/2 Cup Coconut Milk
1 1/2 Cup Water
1/2 Cup Bell Pepper
1 Cup Cornmeal
1/2 Tsp Pepper
Instructions
In a saucepan, saute all vegetables in olive oil.
Add 1/2 cup coconut milk and 1.5 cups of water to boil.
Slowly whisk in the cornmeal, salt, and black pepper.
Reduce heat to low and simmer, stirring frequently, for about 30 minutes or until the mixture thickens.
Cover the saucepan and let it sit for 5 minutes to allow the flavors to combine.
Serve hot as a side dish or a base for other savory dishes.
Optional: You can add 1/2 cup of beans for your protein source.
