Savory Oatmeal is a bold, comforting twist on classic oats, blending mushrooms, peppers, garlic, and herbs in a creamy coconut base. This nutrient-rich dish is hearty and aromatic, offering a satisfying meal for breakfast, lunch, or dinner. A great plant-based alternative to grain bowls or risottos.
Ingredients
1/2 Tsp Oregano
1/4 Tsp Salt
1/4 Tsp Paprika
1/4 Tsp Thyme
1 Cup Rolled Oats
1/4 Cup Mushrooms
1/2 Serving Coconut Milk
2 Cloves Garlic
1/4 Tsp Pepper
2 Tbsp Parsley
1/4 Cup Bell Pepper
2 Servings Avocado Oil
1 1/2 Servings of Water
Instructions
In a medium saucepan, heat the avocado oil over medium heat.
Add the onions, bell peppers, mushrooms, and garlic. Sauté until the vegetables are tender, about 5 minutes.
Add the rolled oats to the saucepan and stir to coat them with the vegetables.
Pour in the coconut milk and water, and add the salt, black pepper, thyme, oregano, and paprika. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover the saucepan and simmer for about 10 minutes, or until the oats are cooked and most of the liquid is absorbed.
Divide the savory oatmeal into serving bowls and garnish with chopped fresh parsley.
Serve hot and enjoy!
Optional: Add 1 tbsp pumpkin seeds or 1/2 cup beans or lentils for additional protein.
