Tofu and Cauliflower Breakfast Skillet

This Tofu & Cauliflower Scramble is a savory, protein-packed vegan dish bursting with flavor and color. Seasoned with turmeric, cumin, and paprika, and loaded with sautéed vegetables, it's a quick, satisfying meal that's low in carbs and perfect for any time of day—especially when served over your favorite grain.

Ingredients

  • 1 Tsp Turmeric

  • 1/2 Tsp Paprika

  • 4 Servings of Cilantro

  • 1 Serving Olive oil

  • 1 Small Onion

  • 2 Portions Garlic

  • 1 Portion Bell Pepper

  • 4 Servings Salt & Pepper

  • 1/2 Tsp Cumin

  • 1 Portion of Organic Tofu

  • 2 Cups Cauliflower florets

Instructions

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onion, garlic, and red bell pepper to the skillet. Sauté until vegetables are softened.

  3. Add cauliflower florets to the skillet and cook for 5 minutes, until slightly tender.

  4. Push the vegetables to one side of the skillet and add crumbled tofu to the other side.

  5. Sprinkle turmeric, cumin, paprika, salt, and pepper over the tofu and vegetables. Stir to combine everything.

  6. Cook for another 5-7 minutes, until the tofu is heated through and slightly crispy.

  7. Remove from heat and garnish with fresh cilantro.

  8. Serve hot and enjoy!

    Optional: Serve over your favorite grain!
