This spiced vegan lentil soup is a flavorful, protein-packed dish made with brown lentils, fresh vegetables, and warming spices. Ingredients
6 Cups of Vegetable Broth
1/4 Tsp Cayenne Pepper
2 Portions of Carrots
1 Medium Onion
3 Portions of Garlic
2 Cups of Tomatoes
6 Servings of Salt & Pepper
6 Tbsp of Parsley
1/2 Tsp Paprika
1 Tsp Ground Cumin
1 Tsp Ground Coriander
2 Portions of Celery stalk
1 Cup Brown Lentils
Instructions
In a large pot, sauté the onion, carrots, and celery in a little bit of vegetable broth until softened, about 5 minutes.
Add the garlic, cumin, coriander, paprika, and cayenne pepper. Cook for another minute until fragrant.
Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for about30 minutes, or until lentils are tender—season with salt and pepper to taste.
Serve hot, garnished with fresh parsley.
