Vegan Lentil Soup

This spiced vegan lentil soup is a flavorful, protein-packed dish made with brown lentils, fresh vegetables, and warming spices. Simmered in vegetable broth and finished with fresh parsley, it’s hearty, healthy, and completely plant-based. Perfect for meal prep, cold days, or anytime you need a satisfying and nourishing bowl.

Ingredients

  • 6 Cups of Vegetable Broth

  • 1/4 Tsp Cayenne Pepper

  • 2 Portions of Carrots

  • 1 Medium Onion

  • 3 Portions of Garlic

  • 2 Cups of Tomatoes

  • 6 Servings of Salt & Pepper

  • 6 Tbsp of Parsley

  • 1/2 Tsp Paprika

  • 1 Tsp Ground Cumin

  • 1 Tsp Ground Coriander

  • 2 Portions of Celery stalk

  • 1 Cup Brown Lentils

Instructions


  1. In a large pot, sauté the onion, carrots, and celery in a little bit of vegetable broth until softened, about 5 minutes.

  2. Add the garlic, cumin, coriander, paprika, and cayenne pepper. Cook for another minute until fragrant.

  3. Add the lentils, vegetable broth, and diced tomatoes. Bring to a boil, then reduce heat and simmer for about30 minutes, or until lentils are tender—season with salt and pepper to taste.

  4. Serve hot, garnished with fresh parsley.

Per serving: 154 Kcal, 10g Protein, 1g Fat, 28g Carbs.
