As far as summer vegetables go, there is always an abundance of greens. While making a salad
can seem like the easiest way to use them all, there are plenty of other easy ways to enjoy your veggies! This alternative toast recipe finds flavor unexpectedly and comes loaded with plant-based protein from beans.
Ingredients:
Prep: 5 min| Cook: 15 min
2 TBSP olive oil
3 cloves garlic, minced
1 bunch of Swiss chard
3 cloves garlic, minced
1 can of beans, drained and rinsed
4 slices of whole-grain toast
Directions:
1. Rinse and pat dry the swiss chard leaves. Remove the leafy greens from the stems and shred or
chop them into bite-sized pieces. Chop stems and set aside.
2. Heat olive oil in a pan over medium heat. Add garlic and let sauté for about 3-5 minutes until golden golden color.
3. Add Swiss chard to the pan and apple cider vinegar. Stir and cook for 5-7 minutes, until
greens are wilted.
4. Add chopped stems and cook for another 2 minutes (this will add a nice crunchy texture
later!).
5. Add beans to the pan and cook until heated about 5 min. While the beans are cooking, throw
bread slices into the toaster.
6. Divide the swiss chard mixture and top onto toast. Enjoy!
Note: Feel free to add a little extra protein: an over-easy egg (another 6.5 g protein!) would make a great addition to turn this into a leisurely breakfast!
